I put a post up quite a while ago for Hummus (click here to see it), so today it’s a simple recipe for Tzatziki. I hope you enjoy this one as much as I do
2 (8 ounce) containers plain yogurt
2 cucumbers – peeled, seeded and diced
2 tablespoons olive oil
1/2 lemon, juiced
salt and pepper to taste
3 cloves garlic, peeled
- Put all ingredients into your food processor or blender, turn it on, turn it off, put the Tzatziki into a container and pop it into the fridge for an hour at least. It’s that simple.
- For a fresh tasting variation, add 1 tablespoon chopped fresh dill.
