Recipe: Paleo Coconut Waffles

    This is another discovery from my never ending search for tasty breakfast ideas. This one is also gluten free and full of protein! I found it at the following link, click here

    Paleo Coconut Waffles

    Possible toppings required: peanut butter, blue berries, and Fleur de Sel

    1/2 cup coconut flour
    1/2 cup protein powder (Life’s Basics Greens Plant Protein- it’s just too good)
    1/4 cup pumpkin puree (fresh or canned)
    1/2 cup almond milk
    2 eggs
    1 tsp vanilla extract
    1/4 tsp baking soda
    cinnamon, cinnamon, and more cinnamon

    Mix all ingredients together and pour about 1/3 cup batter into a heated waffle maker. Heat until no more steam rises from the waffle maker.

    Flavor-enhancing toppings: drizzled peanut butter, Fleur de Sel (big chunks of salt. Mmmmm.), and frozen berries.
