Recipe: Primal Beef Jerky

And I tried it out a couple weeks ago.  It’s a beef jerky recipe without the usual salt or sugar, which cuts out a lot of the problems of beef jerky, leaving you with tasty dried meat.  So, try it out!

Primal Beef Jerky

Step 1:
Get butcher to cut grass-fed steak (I use flank steak but any steak would still be good) into thin 5 mm slices. Ask them to tenderize it (or do it at home yourself)

Step 2:
Preheat oven to 375.

Step 3:
Mix balsamic vinegar, lemon (or lime) juice, Tabasco sauce, spices (salt, pepper, celery root, paprika) and dried garlic in a bowl. You need about a cup of liquid.

Step 4:
Dip meat slices into liquid, shake dry.
Lay pieces directly onto the oven rack.  Be carful not to overlap the pieces.

Step 5:
Turn oven down to 175. Keep oven slightly ajar (I stick a tea towel in the crack to keep it open.

Step 6:
Bake for 2hrs then flip. After 4 hrs you’ll have slightly chewy jerky. If you like it crunchier, leave it in longer.

Step 7:
Let the slices cool then cut with scissors into strips at whatever size you prefer. Store in a Tupperware in the fridge.
